Paleo Pumpkin pie: it’s so good, you won’t believe it’s grain free!

It’s pumpkin time of the year again, and when there’s pumpkin, pie is sure to follow… even if you’ve gone Paleo . That’s right. After all, why should you miss out on all the fall fun?

So here is an amazing Paleo Pumpkin Pie recipe. It’s so good, you won’t believe it’s grain free.

Paleo Pumpkin Pie: It’s So Good, You Won’t Believe It’s Grain Free!

Paleo Pumpkin Pie:

The Crust

What You Need:

  • 1 Cup Of Almond Flour (or you could even make the almond flour yourself by blending a cup of almonds until it’s fine just like flour.)
  • 6 Tablespoons of Coconut Oil
  • 1 Egg
  • A Dash Of Cinnamon Powder

What To Do:

The first thing you wanna do is preheat your oven to 325. While waiting, take 3 tablespoons of coconut oil to grease the pan. The simply mix the other three tablespoons with the almond flour, the butter, the egg, and the cinnamon in a separate bowl. Press the mixture into the bottom and the sides of the pan with your hands. Pop it in the oven while you make the filling. Wait 10-15 minutes or until it starts to brown a bit.

The Filling

What You Need:

  • 2 Cups of Pumpkin Puree (if you wanna make it yourself, it’s at the bottom of this article, if not, you can just get some from a can. But homemade is always better!)
  • 4 Eggs
  • ½ a Cup Of Honey
  • 2 Teaspoons of Cinnamon
  • 1 Teaspoon of Nutmeg
  • 1 Teaspoon of Vanilla
  • 1/3 a Cup of Coconut Milk

What To Do:

Mix all of the ingredients, except for the coconut milk in a bow, then dump it all in the blender. Whiz away. You should have a smooth and creamy substance, relatively thick. Simply add the coconut milk to thin. Mix well. Spread the filling evenly into the crust and then back in the oven for about an hour.

How To Puree A Pumpkin:

Fill a large put with water, add a dash of salt, and bring it to a boil. While waiting, rinse your pumpkin clean over cool water in the sink. Cut the pumpkin in half, take out the seeds (which you can save for later). Chop up the pumpkin some more and peel. Boil the pieces for a good 25-30 minutes. Then dump into a blender or food processor. Voila! Pumpkin Puree!
